What does KO'UZI mean?
It is a word mix between "Cozy" in English and "Kôji" in Japanese.
Kōji (こうじ) is malted rice used in the fermentation process of various foods such as saké, miso and soy sauce, an essential part of Japanese cuisine!
At KO'UZI we want to translate the Japanese spirit into refined European variations of sushi. Our "creative" sushi pieces are made with a Western touch and design, often using local specialties, but always remain true to the refinement and tradition of the original Japanese bites.
Brief history
June 2008 - Opening of the shop in Sint-Jorispoort, a small place with only 6 seats
March 2013 - Silver medal in the World Sushi Cup Tokyo 2013 competition with creative sushi
April 2014 - Move to a larger location - a little further down the street - at Leopoldplaats
Since 2016 - Mentioned in the Michelin Belgium guide
Since 2023 - Mentioned in Michelin Belgium as "Bib Gourmand", a recognition for good price & quality
Owner & chef

At the beginning of her career, Junko specialized in importing chocolate from Europe to Japan, but she quickly switched to raw fish after meeting sushi master Kazato-san (representing director of WSSI) and opened Ko'uzi in Antwerp.
In addition to running the restaurant, supported by a strong and experienced team, she is very active as a member of the WSSI and encourages European sushi chefs to improve their skills. Junko has participated in various events throughout Europe, notably as a jury member of competitions in France, Romania, Norway, Portugal, Poland, Italy...
She also contributed to the creation of the first European Sushi Championship in Monaco in 2023, and is currently preparing - as organizer - for the first Benelux Sushi Cup in 2026 (www.beneluxsushicup.com).
- Azumaya -
At Ko'uzi restaurant space, you can enjoy a selection of high-quality green tea (Sencha, Hojicha, Genmaicha) directly imported from Japan by our partner Azumaya.
Our tea shop area is suggesting more tea leaves variations to taste at home: Matcha, Fukamushi, Kabuse, Shiraore, Kyobancha... Tea cups/pots/matcha preparation kits are also available.
